Instructions

  1. Prepare the Pumpkin:
    Begin by pressure cooking the cubed pumpkin with enough water for about 3 whistles, or until soft. Allow the pressure to release naturally and set the pumpkin aside.

  2. Preheat the Oven:
    Preheat your oven to 180°C (350°F) for about 10 minutes.

  3. Sauté the Vegetables:
    Heat a sauce pan over medium heat and add a little oil. Sauté the sliced onions and chopped garlic until they soften and become aromatic. Add the broccoli florets to the pan and sauté until they retain a slight crunch.

  4. Combine the Vegetables and Spices:
    Add the boiled pumpkin to the sautéed vegetables. Stir in the cinnamon powder, rosemary, salt, and pepper, tossing everything to combine. Let the mixture cook for a few more minutes to allow the flavors to meld. Add the milk to the mixture and check for seasoning. Continue to cook for another 3-4 minutes, allowing the mixture to thicken slightly.
