Description:

There are countless pumpkin soup recipes out there, but few capture the hearty essence like this one does. Rather than finely dicing the vegetables, chopping them gives the soup a more stew-like texture, perfect for a cozy meal on a chilly evening.

Ingredients:

  • 2 tablespoons olive oil
  • 1 Italian sweet sausage, casing removed
  • 4 cloves garlic, minced
  • 1 red onion, chopped
  • 1/2 cup celery, chopped
  • 8 ounces mushrooms, sliced
  • 1/2 cup dry marsala wine
  • 2 tablespoons fresh sage, chopped
  • 1/2 teaspoon thyme
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups pumpkin puree

Instructions:

  1. In a Dutch oven, heat olive oil over medium-high heat. Add the Italian sweet sausage, breaking it into smaller pieces with a spoon, and brown until cooked through.

  2. Once browned, remove the sausage from the pot and place it on a paper towel-lined plate to drain any excess grease.

  3. In the same pot with the remaining oil and sausage grease, sauté the minced garlic, chopped red onion, and celery until they begin to soften slightly.

  4. Add the sliced mushrooms to the pot and continue cooking for an additional 5 minutes, allowing them to brown slightly.

  5. Return the cooked sausage to the pot and drain off any excess grease if necessary.

  6. Deglaze the hot pot by adding the dry marsala wine, scraping up any browned bits from the bottom of the pot with a wooden spoon. Allow the wine to reduce by half, infusing the dish with rich flavor.

  7. Stir in the chopped fresh sage, thyme, salt, and black pepper, combining all the ingredients well.

  8. Add the pumpkin puree to the pot, stirring until it’s fully incorporated with the sausage and vegetable mixture.

  9. Bring the pot to a gentle boil, then reduce the heat to low and let the soup simmer for about 40 minutes, or until the vegetables are tender and the flavors have melded together beautifully.

  10. Once the soup is ready, serve it hot, garnished with a dollop of sour cream and/or crunchy croutons. Pumpernickel croutons add a delightful twist to the dish, complementing the savory flavors of the soup.

  11. If you find that the soup is too thick for your liking, simply thin it out with a bit more stock until it reaches your desired consistency.
