Ingredients:

  • 600g pumpkin, diced
  • 1/4 cup olive oil
  • 1 tablespoon tamari
  • 1 leek, sliced
  • 1 garlic clove, minced
  • 2 cups spinach leaves
  • 6 eggs
  • 250ml cream
  • 10 tablespoons grated parmesan cheese
  • Salt and pepper to taste

Instructions:

Step Description
1 Preheat the oven to 170°C.
2 Grease a 20 x 30cm baking pan with olive oil.
3 In a bowl, mix diced pumpkin with 1 tablespoon of olive oil and tamari until well coated.
4 Spread the pumpkin on a large baking tray and roast for 25 minutes, or until golden.
5 Meanwhile, heat the remaining olive oil in a large pan over medium heat. Add sliced leek and cook for 2-3 minutes until softened.
6 Add minced garlic to the pan and cook for an additional minute. Then, add spinach leaves and cook until wilted. Remove from heat and roughly chop the mixture. Set aside.
7 In a large bowl, whisk together eggs, cream, and grated parmesan cheese. Season generously with salt and pepper. Stir in the reserved pumpkin and spinach mixture.
8 Pour the egg mixture into the prepared baking pan.
9 Bake for about 35 minutes, or until the frittata is set and golden on top.
10 Allow the frittata to cool slightly before slicing and serving. Enjoy hot or at room temperature!
