Ingredients:
- 600g pumpkin, diced
- 1/4 cup olive oil
- 1 tablespoon tamari
- 1 leek, sliced
- 1 garlic clove, minced
- 2 cups spinach leaves
- 6 eggs
- 250ml cream
- 10 tablespoons grated parmesan cheese
- Salt and pepper to taste
Instructions:
Step | Description |

1 | Preheat the oven to 170°C. |
2 | Grease a 20 x 30cm baking pan with olive oil. |
3 | In a bowl, mix diced pumpkin with 1 tablespoon of olive oil and tamari until well coated. |
4 | Spread the pumpkin on a large baking tray and roast for 25 minutes, or until golden. |
5 | Meanwhile, heat the remaining olive oil in a large pan over medium heat. Add sliced leek and cook for 2-3 minutes until softened. |
6 | Add minced garlic to the pan and cook for an additional minute. Then, add spinach leaves and cook until wilted. Remove from heat and roughly chop the mixture. Set aside. |
7 | In a large bowl, whisk together eggs, cream, and grated parmesan cheese. Season generously with salt and pepper. Stir in the reserved pumpkin and spinach mixture. |
8 | Pour the egg mixture into the prepared baking pan. |
9 | Bake for about 35 minutes, or until the frittata is set and golden on top. |
10 | Allow the frittata to cool slightly before slicing and serving. Enjoy hot or at room temperature! |
