Ingredients

Quantity Ingredient
200g Red kidney beans, soaked overnight
1 small Onion, finely diced
4 cloves Garlic, finely chopped
1L Water
200g Tinned plum tomatoes (Β½ tin)
2 tsp Ginger, grated
1 tsp Salt
1 Chilli, roughly chopped
1 tsp Turmeric
1 tsp Garam masala
Handful Coriander, chopped

Instructions

  1. Prepare the Beans: In a pressure cooker, add the soaked red kidney beans along with any remaining soaking liquid. Pour in enough water to total approximately 1 liter, then add the salt. Secure the lid and bring the mixture to a boil. Once the cooker whistles, reduce the heat and let it simmer for about 30 minutes.

  2. Cool Down: After 30 minutes, turn off the heat and allow the pressure cooker to cool naturally; do not remove the lid during this time.

  3. SautΓ© the Aromatics: In a frying pan, heat a drizzle of oil over medium heat. Add the diced onion and chopped garlic, frying them until they turn golden brown.

  4. Create the Masala: Lower the heat and stir in the tinned tomatoes, grated ginger, chopped chilli, and turmeric. Cook this mixture for 5 to 10 minutes until it thickens and develops a shiny masala paste.

  5. Check the Beans: Once the pressure has released from the cooker, carefully open the lid. Test the kidney beans by squeezing them between your fingers; they should be soft and easily squished. If they are not fully cooked, check the water level and add more if necessary. Secure the lid back on and bring to a boil again, then simmer for an additional 10 minutes.

  6. Combine and Heat: Once the kidney beans are tender, add the prepared masala paste to the beans and stir well. Allow the mixture to heat gently for about 5 minutes.

  7. Final Touches: Just before serving, sprinkle the garam masala and chopped coriander over the dish for a burst of flavor.

  8. Serve: Enjoy your delicious Raajma with steamed rice, naan, or roti for a complete meal.

This recipe for Raajma not only highlights the wonderful combination of spices and ingredients but also provides a comforting dish that is perfect for family gatherings or weeknight dinners. Each step is designed to create a flavorful experience, making it a favorite among many. Enjoy the warmth and satisfaction that comes with this traditional Indian kidney bean curry!
