Instructions

To create the delectable Gavar Ki Sabzi, begin by heating the oil in a pressure cooker over medium heat. Once the oil is hot, add the mustard seeds and let them splutter for about 10 seconds. Following this, incorporate the cumin seeds and allow them to toast lightly, releasing their aromatic essence into the oil.

Next, introduce the asafoetida, turmeric powder, crushed garlic, chopped onion, red chili powder, grated ginger, and coriander powder into the cooker. Stir the mixture well, allowing the ingredients to meld together, and let them cook for approximately 15 seconds, during which the spices will release their fragrance and the onions will start to soften.

Once the mixture is aromatic, add the chopped tomatoes and the prepared cluster beans (gawar). Gently stir to combine all the ingredients thoroughly, ensuring the tomatoes start to break down slightly, creating a flavorful base for your sabzi.

Now, season the mixture with salt according to your taste, followed by pouring in 1/4 cup of water. Secure the lid of the cooker and cook until you hear one whistle (or “city”)—this will infuse the flavors into the gawar and ensure they are cooked to perfection. After the whistle, reduce the heat to low and allow the sabzi to simmer for an additional 5 minutes, allowing the spices to deepen in flavor and the vegetables to become tender.

After the cooking time is complete, remove the cooker from the heat and allow it to release steam naturally. Open the lid, and you will be greeted with a delightful aroma. Garnish your Gavar Ki Sabzi with freshly chopped coriander, adding a burst of color and freshness.
