  1. Begin by finely chopping the rosemary and sage together to release their full flavors. Set aside.

  2. Take the sausages and, using a skewer, carefully make small holes (about 1 cm apart) on all sides of the sausages, ensuring the holes run the entire length. This step allows the sausage fat to escape and helps the wine penetrate the meat, enhancing its flavor during the cooking process.
