Instructions

  1. In a mixing bowl, thoroughly beat the eggs. Add the crushed garlic, sliced green onions, and salt, mixing until well combined.
  2. Preheat a non-stick skillet over medium heat without adding oil. Pour in about 2 tablespoons of the egg mixture, spreading it evenly across the pan. Allow it to cook until the bottom begins to set.
  3. Gently roll the partially cooked egg from one side to the other, pushing it to the edge of the skillet.
  4. Add another tablespoon of the egg mixture to the empty side of the pan, allowing it to spread and cook. Once it starts to set, repeat the rolling process, incorporating the previous roll into the new layer.
  5. Continue this process until all the egg mixture is used, adding oil to the skillet as needed to prevent sticking.
  6. Once all the rolls are complete, fry each side until golden brown, then remove from the skillet and let them drain on paper towels.
  7. After cooling slightly, slice the rolled eggs into bite-sized pieces and serve warm.
