Ingredients:
- 5 1/2 cups bread flour
- 2 tablespoons sugar
- 1 packet fast-rising yeast
- 1 3/4 cups warm water
- 3 tablespoons olive oil
- 1 tablespoon fresh rosemary, finely chopped
- 1 teaspoon dried rosemary leaves
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 cup grated Parmesan cheese
- 3 tablespoons wheat germ
- 1 tablespoon fresh rosemary leaves, chopped
- 1 teaspoon paprika
Instructions:
- Prepare the Dough:
- In a large bowl of a heavy-duty electric mixer, combine 2 cups of flour, sugar, and yeast.
- Beat warm water into the flour mixture until a soft dough forms.
- Cover and set aside for 20 minutes to allow the dough to rise.
- Prepare the Crumb Topping:
- In a cup, combine grated Parmesan cheese, wheat germ, chopped rosemary leaves, and paprika. Set aside for later use.
- Prepare the Bread:
- Lightly grease a 2 1/2-quart souffle dish (casserole dish) and set it aside.
- Place olive oil in a small bowl.
- Add the remaining 3 cups of flour, fresh rosemary, minced garlic, and salt to the soft dough.

- Turn the dough out onto a floured surface and knead, adding the remaining flour as necessary, until the dough is smooth and elastic, about 5 minutes.
- Shape and Assemble:
- Divide the dough into 24 equal pieces.
- Dip each piece of dough into the olive oil and roll it into a ball.
- Dip each ball into the prepared Crumb Topping and place them, crumb side up, in the greased dish.
- Cover loosely with a clean cloth and let it rise in a warm place until double in size, about 45 minutes.
- Bake:
- Preheat the oven to 350ยฐF (175ยฐC).
- Optionally, tuck tiny rosemary sprigs between the dough balls for added flavor and presentation.
- Bake for 55 to 60 minutes or until golden brown and the bread sounds hollow when tapped on top.
- Serve:
