Authentic Russian Cabbage Soup 🥣

Ingredients:

1 Cup heavy cream
1 Cup sour cream
1/2 Teaspoon peppercorns
8 Cups water

Instructions:

  1. Boil the Beef: In a large pot, combine the beef with half of the onions, carrots, and celery along with 2 liters of water. Bring to a boil and let it simmer for 2 hours until the beef is tender. After 1 hour, season with salt to taste.

  2. Prepare the Sauerkraut: In an ovenproof bowl, pour 1 liter of boiling water over the sauerkraut. Add a drizzle of olive oil and the heavy cream. Cover the bowl and place it in the oven at medium heat for 30 minutes or until the sauerkraut is soft.

  3. Prepare Mushrooms and Potatoes: In a separate saucepan, boil the dried mushrooms and potatoes in 2 cups of cold water until they are tender. Remove the mushrooms, slice them, and set aside.

  4. Combine Ingredients: Once the beef is cooked, drain the broth and set it aside. Cut the beef into 1-inch cubes and set aside. In a large pot, combine the cooked beef, sauerkraut, sliced mushrooms, potatoes, remaining onions, celery root, celery, dill, bay leaves, garlic cloves, and peppercorns. Mix well.

  5. Simmer and Season: Bring the mixture to a boil and let it simmer for 20 minutes. Taste and adjust seasoning as needed. Remove from heat, cover with a towel, and let it stand for an additional 20 minutes to allow the flavors to meld.
