Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1/2 cup dried parsley flakes
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/4 cup caraway seeds
  • 4 ounces cream cheese
  • 2 cups chopped corned beef
  • 2 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped chives
  • 2 tablespoons chopped onions
  • 2 tablespoons spicy brown mustard
  • 1 teaspoon garlic powder

Instructions:

  1. In a saucepan over medium heat, bring water and unsalted butter to a boil.
  2. Add all-purpose flour, dried parsley flakes, garlic powder, and salt all at once; stir until a smooth ball forms.
  3. Remove from the heat; let stand for 5 minutes to cool slightly.
  4. Beat in eggs one at a time until the mixture is smooth and well combined.
  5. Drop the batter by rounded teaspoonfuls onto greased baking sheets, about 2 inches apart.
  6. Sprinkle the tops with caraway seeds for added flavor.
  7. Bake at 400°F (200°C) for 18-20 minutes or until the puffs are golden brown.
  8. Remove from the oven and transfer the puffs to wire racks to cool completely.
  9. Immediately cut a slit in each puff crossways through the center, not all the way through, to allow steam to escape and create a cap-like top.
  10. Let the puffs cool completely.

Filling:

  1. In a mixing bowl, combine cream cheese, chopped corned beef, mayonnaise, sour cream, chives, onions, spicy brown mustard, and garlic powder.
  2. Mix well until all ingredients are thoroughly combined.
  3. Stir in chopped olives for an extra burst of flavor.

Assembly:

  1. Open each cooled puff and stuff with the prepared filling.
  2. Lightly close the tops of the puffs over the filling.

Chilling:

  • Cover the filled puffs and chill until ready to serve.

Yield: Makes about 4 1/2 dozen Rye Party Puffs.
