Sapo Eggplant, Mushrooms, and Beef Delight
Ingredients
- 500 grams purple eggplant, sliced diagonally
- 1 head of broccoli, cleaned and boiled
- 150 grams beef, thinly sliced
- 150 grams button mushrooms, sliced
- 2 cloves garlic, minced
- 1 medium-sized onion, quartered
- 3 red bird’s eye chilies, sliced
- 1/4 cup (about 60 ml) oyster sauce (I used Saori brand)
- 3 tablespoons tomato sauce
- 1 1/2 tablespoons granulated sugar
- 1 tablespoon chili sauce
- 1/2 tablespoon sesame oil
Preparation Steps
-
Fry the Eggplant:
- Begin by frying the diagonally sliced eggplants until they are golden brown and slightly crispy. Set them aside to drain any excess oil.
-
Sauté the Aromatics and Beef:
- In a large pan or wok, heat a little oil over medium heat.
- Add the minced garlic and sliced bird’s eye chilies, and sauté until fragrant.
- Add the thinly sliced beef and cook until it starts to brown and is almost cooked through.
-
Add Mushrooms and Onion:
- Incorporate the sliced button mushrooms and quartered onion into the pan.
- Continue to sauté until the mushrooms are tender and the onion is slightly translucent.
-
Add the Sauces and Seasonings:
- Pour in the oyster sauce, tomato sauce, chili sauce, and granulated sugar.
- Stir well to combine all the ingredients, allowing the flavors to meld together.
- Taste the mixture and adjust the seasoning if necessary, as the saltiness of oyster sauce can vary between brands.
- Once the taste is to your liking, turn off the heat and stir in the sesame oil.
-
Serve:
- Arrange the boiled broccoli on a serving plate.
- Pour the sautéed eggplant, mushrooms, and beef mixture over the broccoli.
- Serve immediately, enjoying this savory, aromatic dish that beautifully combines the earthy flavors of eggplant and mushrooms with the rich taste of beef and a delightful mix of sauces.
Tips for Success
- Broccoli: Make sure the broccoli is tender but still vibrant green. Overcooking can cause it to lose its bright color and become mushy.
- Sauce Adjustments: Feel free to adjust the amount of chili sauce according to your preference for spiciness. Similarly, you can tweak the amount of sugar if you prefer a slightly less sweet dish.
- Eggplant Preparation: Frying the eggplant helps to bring out its natural sweetness and gives it a nice texture that contrasts well with the other ingredients.
