Ingredients

2 Sardines (cleaned)
3 leaves Kaffir lime leaves
1 Onion (thinly sliced)
1 stalk Green onion (sliced)
2 tablespoons Chili sauce
1 tablespoon Sweet soy sauce
1 tablespoon Oyster sauce
To taste Salt
To taste Sugar
To taste Bouillon powder
~120 ml Water (or more, as needed)
For the spice paste:
2 Red tomatoes
12 Red chilies
5 cloves Garlic
7 cloves Shallots

Instructions

  1. Prepare the Spice Paste: Boil the tomatoes, red chilies, shallots, and garlic until softened, then blend until smooth.

  2. Prepare the Sardines: Clean the sardines, cut them in half, wash thoroughly, and soak in a mixture of water and lime juice for several minutes. Rinse again.

  3. Fry the Sardines: Fry the sardines until golden brown, then set aside.

  4. Sauté the Aromatics: In a pan, sauté the sliced onion until fragrant. Add the blended spice paste and continue to sauté, incorporating the kaffir lime leaves.

  5. Combine Ingredients: Gently mix in the fried sardines, then add water. Stir carefully, followed by the chili sauce, sweet soy sauce, oyster sauce, sugar, salt, and bouillon powder. Adjust the taste as needed.

  6. Cook the Dish: Bring the mixture to a boil, then lower the heat and let it simmer until the flavors meld together. Add the sliced green onions and stir to combine.

  7. Serve: Transfer to a serving dish and enjoy your flavorful Salem Masak Sarden!
