Scalloped Potatoes with Sausage and Peppers ๐ฅ๐ถ๏ธ

Ingredients:
- 2 tablespoons olive oil
- 1 pound bulk Italian sausage
- 2 onions, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- Coarse salt, to taste
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 can (14.5 ounces) diced tomatoes with juice
- 1 3/4 pounds russet potatoes, peeled and thinly sliced
- 1/4 cup all-purpose flour
- 3/4 cup grated Parmesan cheese, divided
- Freshly ground black pepper, to taste
- 2 cups half-and-half
Instructions:

Prepare the Sausage and Peppers Mixture:
- Heat olive oil in a large heavy skillet over medium heat.
- Crumble in the Italian sausage and cook, stirring and breaking up the meat, until it loses its pink color.
- Drain all but 1 tablespoon of fat.
- Add chopped onions and diced bell peppers, season with salt, and sautรฉ until softened.
- Stir in minced garlic and cook for about 1 minute until fragrant.
- Add dried oregano, crushed red pepper flakes, and diced tomatoes with juice. Stir well, breaking up the tomatoes, and cook until the mixture thickens. Remove from heat.

Prepare the Potato Layers:
- Preheat the oven to 350ยฐF (175ยฐC).
- Grease a 3-quart casserole dish.
- In a small bowl, combine flour with 1/4 cup of grated Parmesan cheese.

Layer the Casserole:
- Place one-third of the thinly sliced potatoes in a layer at the bottom of the greased casserole dish.
- Season with salt and pepper, then sprinkle half of the flour and cheese mixture over the potatoes.
- Spoon half of the sausage and peppers mixture evenly over the potatoes.
- Repeat the layers, ending with a final layer of potatoes and seasoning.

Bake the Casserole:
- Pour the half-and-half over the layered potatoes.
- Cover the casserole dish with aluminum foil.
- Bake in the preheated oven for 45 minutes.
- Uncover the casserole and gently press the potatoes down to submerge them in the liquid.
- Sprinkle the remaining 1/4 cup of grated Parmesan cheese over the top.
- Bake uncovered for an additional 40 minutes or until the top is golden brown and the dish is bubbling with flavor.

Serve:
- Remove the casserole from the oven and let it rest for at least 20 minutes before serving. This allows the flavors to meld and the dish to set.
- Serve hot, garnished with fresh herbs if desired.
