Instructions:

  1. Prepare the Ingredients:

    • Brown the Italian sausage over medium heat, then drain any excess fat.
    • Slice the zucchini and yellow squash, and sauté them in a little butter until tender. Season with salt and pepper to taste.
  2. Mix the Ricotta Mixture:

    • In a small bowl, combine the ricotta cheese, egg, dried basil, and dried oregano. Mix until well combined.
  3. Layer the Lasagna:

    • Preheat the oven to 350°F (175°C).
    • In a 13×9-inch baking dish, spread about 3/4 cup of the sauce evenly on the bottom.
    • Place a layer of lasagna noodles on top of the sauce. They will expand when cooked, so make sure to overlap them slightly.
    • Spread about 2/3 cup of the ricotta mixture over the noodles.
    • Sprinkle some of the sautéed zucchini and yellow squash on top of the ricotta mixture.
    • Pour about 3/4 cup of the sauce over the vegetables, then top with 1 cup of mozzarella cheese. Repeat these layers three times.
  4. Bake the Lasagna:

    • Sprinkle the remaining parmesan cheese over the top layer of cheese.
    • Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is hot and bubbly.
    • Let the lasagna stand for 5 minutes before serving to allow it to set.

Enjoy your delicious Erin’s Lasagna! 🍽️🥂
