Ingredients

2 tbsp Olive oil
1 1/2 lb Sweet Italian sausage links
2 Hot Italian sausage
2 slices Prosciutto ham
2 Onions
2 Carrots
2 Celery ribs
1 tsp Dried thyme leaves
3 cans Great northern beans
1 can White beans
8 cups Chicken broth

Instructions

  1. Prepare Ingredients: Heat olive oil in a large, deep saute pan or soup kettle over medium-high heat.

  2. Brown Sausages: When the pan is hot, add sweet and hot Italian sausages. Cook, turning once or twice, until well-browned on all sides, about 5 minutes. The sausages will not be fully cooked at this point. Remove them from the pan and let them cool slightly.

  3. Slice Sausages: Once cool enough to handle, cut the sausages into slices about 1/4-inch thick.

  4. Cook Aromatics: In the same pan, add prosciutto, onions, carrots, celery, and dried thyme leaves. Cook, stirring often, until well-browned, about 8 to 10 minutes.

  5. Prepare Bean Puree: In a small bowl, mash one can of great northern beans with a fork into a chunky puree.

  6. Combine Ingredients: Add chicken broth, whole and mashed beans, sliced sausages, and prosciutto to the pan. Cover and bring the mixture to a simmer.

  7. Simmer Soup: Reduce the heat to medium-low and simmer the soup, partially covered, to allow the flavors to blend, for about 20 minutes.

  8. Rest and Serve: Let the soup rest for 10 minutes before serving. Ladle into bowls and enjoy the warmth and comfort of this delicious Sausage and White Bean Soup!
