Sausage-Stuffed Egg Rolls
Ingredients:
- 2 large eggs
- 1 large beef sausage (such as So Nice)
- 3 stalks of celery or green onions
- Salt, to taste
- Ground black pepper, to taste
- Cooking oil, for frying

Prepare the Egg Mixture: In a bowl, crack the eggs and whisk them thoroughly. Add finely chopped celery or green onions, along with salt and ground black pepper. Continue whisking until the mixture is smooth and slightly runny.

Heat the Pan: Place a non-stick skillet or frying pan over medium heat. Add about 1 tablespoon of cooking oil and allow it to heat up.

Cook the Egg Base: Pour the egg mixture into the skillet, spreading it out evenly to form a thin layer. Let it cook until the edges start to set and the surface is just about dry.

Add the Sausage: Place the sausage on top of the partially cooked egg layer. Carefully roll the egg around the sausage, using a spatula to help lift and fold as you go. Cook until the egg turns golden brown and is fully set, turning occasionally to ensure even cooking.

Repeat the Process: Move the cooked roll to the side of the skillet. Add a little more oil if needed, and pour in more egg mixture to form another thin layer in the pan. Once the new layer is slightly set, roll the cooked sausage roll back into the pan, encasing it in the fresh egg layer. Continue this process until all of the egg mixture is used and the rolls are golden brown.

Serve: Once all the egg rolls are cooked, transfer them to a cutting board. Slice into bite-sized pieces or according to your preference. Serve hot and enjoy!
