Ingredients:
- 2 packets dry yeast
- 1/2 cup water
- 1/4 cup unsalted butter
- 1/4 cup shortening
- 1/4 cup sugar
- 2 cups milk
- 2/3 teaspoon salt
- 1 egg yolk
- 4 cups all-purpose flour
- 1 stick butter, melted (for brushing)
- 12 little pinky-sized smoked sausage links (or spicy sausage links)
- Optional: cheese, jalapeno slices
Instructions:
- In a small bowl, combine the yeast with water. Set aside.
- In a large bowl, cream together the unsalted butter, shortening, and sugar until the mixture is light and fluffy.
- Mix in the egg yolks, milk, and salt until well combined.
- Stir in the dissolved yeast and flour until thoroughly blended into a soft dough.
- Cover the dough with a towel and set it aside to rise until it doubles in size, approximately 1 to 1 1/2 hours.
- Grease a baking sheet.
- Pinch off pieces of dough about the size of a golf ball, flatten slightly, and transfer them to the baking sheet, ensuring they’re at least 1 inch apart.
- Liberally brush the dough balls with melted butter and set them aside to double in size again, about 45 minutes to one hour.
- Gently indent the top of the dough with your thumb, creating a fairly deep impression.
- Place a little pinky-sized smoked sausage link (you can also add cheese or jalapeno slices) in the indent and fold the kolache over the sausage, sealing it.
- Bake in a preheated 425°F (220°C) oven for 10-12 minutes or until golden brown.
- Immediately brush butter on the top of the kolaches.
