Sautéed Rice with Tuna

Prepare the Vegetables:
Start by prepping the vegetables for the sautéed rice. Open the fava bean pods and remove the beans, placing them in a bowl. Peel and trim the carrots, then cut them into thin rounds. Next, slice the rounds into julienne strips. Do the same with the zucchini, cutting them into thin strips. Set the vegetables aside. -
Cook the Rice:
In a large pot, bring salted water to a boil. Once boiling, add the basmati rice and cook for 10 minutes, or until tender. Drain the rice and set it aside. -
Cook the Vegetables:
While the rice is cooking, heat a wide skillet over medium heat and add a splash of olive oil along with the garlic clove. Sauté the garlic until fragrant, then add the leeks and carrots. Stir and cover, cooking for about 5 minutes. Add 30g of soy sauce to the pan and mix well. Then, add the fava beans and continue cooking for another 2 minutes. -
Add Tuna and Combine:
Drain the canned tuna and add it to the pan with the vegetables. Stir everything together and cook for another minute, allowing the tuna to heat through and combine with the flavors. -
Combine Rice and Vegetables:
Add the cooked rice to the skillet with the vegetable and tuna mixture. Stir vigorously over high heat for about 1 minute, ensuring the rice is well-coated with the flavorful ingredients. Turn off the heat and allow the mixture to cool slightly. -
Toast the Peanuts:
In a separate small pan, toast the peanuts over medium heat for 2-3 minutes until golden and fragrant. -
Serve:
Once the rice mixture has cooled to a comfortable temperature, garnish with the toasted peanuts. Serve the sautéed rice with tuna warm or at room temperature, as it can be enjoyed both ways.
