Savory Schiacciatine: A Perfect Antipasti Delight

Schiacciatine sfiziose are delicious, crispy, and savory bites that are perfect for serving as an antipasto. Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the all-purpose flour, fine salt, and a pinch of baking soda (about 3g). Add the softened butter and mix everything together.
    • Gradually add the water, kneading by hand until you form a smooth, elastic dough.
  2. Shape the Schiacciatine:
    • Using a bench scraper, divide the dough into pieces weighing approximately 55g each.
    • Roll each piece into a ball and set them aside.
  3. Prepare the Boiling Water:
    • In a large pot, bring 2 liters of water to a boil. Once boiling, add the remaining 35g of baking soda.
  4. Cook the Schiacciatine:
    • Flatten each dough ball using your fingers to form an 8 cm diameter disc.
    • Carefully drop the discs into the boiling water and cook for 30-40 seconds. The dough should puff up and float to the surface.
  5. Drain and Bake:
    • Using a slotted spoon, remove the cooked schiacciatine from the boiling water and place them on a baking sheet lined with parchment paper.
    • Sprinkle the tops with flaked sea salt.
  6. Serve:
    • To assemble, fill the schiacciatine with a generous dollop of creamy stracciatella cheese and top with thin slices of speck.
    • Garnish with freshly chopped chives and serve immediately, warm and crispy!
