Instructions

  1. Prepare the Tofu:
Begin by cutting the yellow tofu into triangular pieces. Heat oil in a pan and fry the tofu until golden and cooked through. Once done, remove from the pan and drain on paper towels.

  2. Prepare the Tempeh and Eggs:
Slice the tempeh according to your preference; there’s no need to fry it beforehand. In a separate pot, boil the eggs until fully cooked. Once cooked, peel the eggs and then fry them in oil until they turn a beautiful golden brown. Drain and set aside.

  3. Make the Spice Paste:
In a blender or food processor, combine the bird’s eye chilies, red chilies, shallots, garlic, turmeric, ginger, and candlenut. Blend until you achieve a smooth paste.

  4. Cook the Spice Mixture:
Heat a little oil in a large pot or skillet. Add the ground spice paste and sauté until fragrant. Incorporate the coarse seasonings—galangal, bay leaves, and lemongrass—stirring well to release their flavors.

  5. Combine the Ingredients:
Pour in the sweet soy sauce and seasoning powder, stirring to combine. Gradually add the water, bringing the mixture to a gentle simmer. Add the tempeh and tofu, mixing everything thoroughly. Allow to simmer for about 3 minutes, stirring occasionally to ensure even cooking.

  6. Add the Eggs:
Finally, introduce the fried eggs into the pot. Gently mix them into the semur, allowing the flavors to meld together. Taste and adjust seasoning if necessary. Let simmer until the sauce thickens and reduces slightly.

  7. Serve:
Once ready, remove from heat. Serve hot with steamed rice and garnish with additional chilies if desired. Enjoy this delicious and hearty Semur T3!

Cooking Tips:

  • For an extra depth of flavor, consider adding a dash of coconut milk.
  • Adjust the level of spiciness by increasing or decreasing the amount of chilies used.
  • This dish can be made ahead of time and reheats beautifully, making it great for meal prep.

Indulge in the delightful flavors of Semur T3, a dish that embodies warmth and comfort, perfect for any family gathering or weeknight dinner. Enjoy!
