Ingredients:

3 Celery
1 Onion

2 cups Long grain rice

1 lb Large shrimp

Instructions:

  1. Prepare the Sausage:

    • In a 12-inch skillet over medium heat, cook the sweet Italian sausage links.
    • Add ¼ cup water to the skillet and bring to a boil.
    • Cover the skillet and cook the sausages for 5 minutes.
    • Remove the cover and continue cooking until the sausages are well browned, about 20 minutes. Turn the sausages frequently and prick them to release fat.
    • With a slotted spoon, remove the sausages to paper towels to drain.
    • Cut the sausages into 1-inch chunks and place them in a 4-quart casserole dish.
  2. Preheat the Oven:

    • Preheat your oven to 375 degrees Fahrenheit.
  3. Cook the Vegetables:

    • In the drippings remaining in the skillet over medium heat, cook the celery, onion, and green pepper until the vegetables are tender, stirring occasionally.
    • With a slotted spoon, remove the vegetables to the casserole dish with the sausages.
  4. Prepare the Rice Mixture:

    • Add the can of tomatoes with their liquid, long grain rice, salt, ground red pepper, and 2 cups of water to the casserole dish.
    • Cover the dish and bake for 35 minutes, stirring frequently.
  5. Prepare the Shrimp and Peas:

    • Meanwhile, shell and devein the shrimp.
    • After the rice has baked for 35 minutes, tuck some shrimp into the rice mixture and arrange peas and some shrimp on top of the casserole.
    • Cover the dish and continue baking for 10 minutes or until the shrimp turns pink, the rice is tender, and all the liquid is absorbed.
  6. Serve:

    • Once cooked, remove the Shrimp Creole from the oven and let it cool slightly.
