Instructions

  1. Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

  2. Prepare the Baking Dish: Generously spray a baking dish large enough to accommodate both the chicken and the vegetables with non-stick vegetable spray.

  3. Herb Mixture: In a small bowl, combine the chopped parsley, dried sage, rosemary, thyme, and a generous amount of fresh ground black pepper. Set this mixture aside for later use.

  4. Prepare the Potatoes: Quarter the russet potatoes without peeling them, and then cut the quarters into ½-inch pieces. Set aside.

  5. Season the Chicken: Rub salt and about 2 teaspoons of the herb mixture into the cavity of the chicken. Insert one bay leaf into the cavity and tie the legs together to maintain the chicken’s shape.

  6. Exterior Seasoning: Sprinkle some salt on the outside of the chicken, then brush it with a few tablespoons of olive oil. Sprinkle half of the remaining herb mixture generously over the chicken.

  7. Arrange in Baking Dish: Place the seasoned chicken in the prepared baking dish.

  8. Prepare Vegetables: In a large bowl, toss the quartered potatoes and halved shallots with the remaining olive oil and herb mixture, along with the second bay leaf, crumbled into pieces. Mix well to ensure even coating.

  9. Bake: Spoon the vegetable mixture evenly around the chicken in the baking dish. Bake uncovered for approximately 1 hour and 15 minutes, or until the juices run clear when pierced at the thickest part of the thigh and the legs move easily.

  10. Baste and Turn: Throughout the baking process, periodically baste the chicken with its juices and turn the vegetables to ensure even cooking.

  11. Rest the Chicken: Once fully cooked, carefully remove the chicken and vegetables from the baking dish and arrange them on a serving platter. Cover with aluminum foil or a large domed pot cover to keep warm while preparing the sauce.

  12. Make the Sauce: Pour the pan juices into a large glass measuring cup and degrease by absorbing excess grease with clean, dry paper towels. Add enough chicken stock to measure a total of 2 cups.

  13. Deglaze: Pour the balsamic vinegar into the baking dish and bring to a boil over medium heat, scraping up any browned bits from the bottom. You can continue in the same dish or transfer it to a small saucepan.

  14. Reduce the Sauce: Boil for about 4 minutes until reduced to a glaze. Add the stock mixture and continue boiling until reduced to about ½ cup, which should take approximately 10 minutes.

  15. Finish the Sauce: Reduce the heat to low and whisk in the butter, one piece at a time, until fully incorporated. Taste the sauce and adjust the seasoning if needed, then stir in the chopped parsley.

  16. Serve: Slice the roasted chicken and serve alongside the vegetables, drizzling the rich sauce over the top for the ultimate flavor experience.

Enjoy!
