Title: Beef Sirloin with English Sauce and Stink Beans

Ingredients:

  • 250 grams of sirloin beef, trimmed of fat and sliced thinly against the grain
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 medium onion, chopped into large cubes

  • 2-3 teaspoons tapioca flour, dissolved in a little cold water

Sauce Ingredients:

  • 3 tablespoons tomato ketchup
  • 1 tablespoon HP sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1 tablespoon sweet soy sauce
  • 150 mL chicken broth (can be substituted with hot water and chicken stock powder)

Steps:

  1. Marinate the Beef: In a bowl, combine the sliced sirloin with 2 teaspoons of soy sauce, 1 tablespoon of sesame oil, and a pinch of pepper. Let it marinate for about 15 minutes.

  2. Prepare the Omelet: Lightly beat the eggs and cook them into a thin omelet. Set aside on a serving plate.

  3. Sauté Aromatics: Heat some oil in a pan over medium heat. Sauté the onions, garlic, and smashed ginger until they are softened and aromatic.

  7. Thicken the Sauce: Adjust the seasoning with salt and pepper. Stir in the tapioca flour mixture to thicken the sauce. Cook for another minute until the sauce is glossy and coats the ingredients well.

  8. Serve: Pour the beef mixture over the omelet on the serving plate. Serve hot with steamed white rice.
