During the cold winter months after a day skiing, there is nothing more satisfying and easy than a slow cooking stew. I prefer my crock-pot for this one, but you can also cook this using a stovetop method. I have always served this with broad noodles or rice and of course a wonderful home baked crusty roll!

Instructions:
- In a large pot, heat olive oil over medium-high heat.
- Saute in batches stewing beef, onions, carrots, and celery until they’re nicely browned and aromatic.
- Add chickpeas, beef stock, tomato paste, chili powder, cumin, oregano, and salt to the pot.
- Bring the mixture to a boil and then transfer it to a crockpot for slow cooking.
- Cover and cook on low for 8-10 hours or until the meat is tender and the flavors are well melded.
- About 15 minutes before serving, add chopped sweet pepper to the stew for an extra burst of flavor and color.
- If the stew needs thickening, mix flour with a bit of water until smooth and stir it into the stew until desired consistency is reached.
