Mom’s Favourite Winter Stew

During the cold winter months after a day skiing, there is nothing more satisfying and easy than a slow cooking stew. I prefer my crock-pot for this one, but you can also cook this using a stovetop method. I have always served this with broad noodles or rice and of course a wonderful home baked crusty roll!

Ingredients:

1 Olive oil
1 Stewing beef
2 Onions
2 Carrots
2 Celery
1 Can of chickpeas
250g Beef stock
156g Tomato paste
2 tsp Chili powder
1 tsp Cumin powder
1 tsp Dried oregano
3/4 tsp Salt

Instructions:

  1. In a large pot, heat olive oil over medium-high heat.
  2. Saute in batches stewing beef, onions, carrots, and celery until they’re nicely browned and aromatic.
  3. Add chickpeas, beef stock, tomato paste, chili powder, cumin, oregano, and salt to the pot.
  4. Bring the mixture to a boil and then transfer it to a crockpot for slow cooking.
  5. Cover and cook on low for 8-10 hours or until the meat is tender and the flavors are well melded.
  6. About 15 minutes before serving, add chopped sweet pepper to the stew for an extra burst of flavor and color.
  7. If the stew needs thickening, mix flour with a bit of water until smooth and stir it into the stew until desired consistency is reached.
