Basic Brown Stock Recipe

  • 5-6 pounds bones, cut into 3 to 4 inch pieces
  • 5-6 onions
  • 8 carrots
  • 4 celery stalks
  • 4 tablespoons tomato puree
  • 8 bay leaves
  • 1/2 bunch of thyme
  • 1/8 cup whole peppercorns
  • 1/8 cup parsley stems
  • 3-4 cloves

🔥 Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the bones by cutting them into pieces.
  3. Roast the bones in a roasting pan in the preheated oven until they are well browned.
  4. Transfer the browned bones to a stockpot.
  5. Cover the bones with water and bring to a simmer.
  6. Skim off any impurities that rise to the top of the water.
  7. Drain and reserve the fat from the roasting pan.
  8. Deglaze the roasting pan with water and add the liquid to the stockpot.
  9. Prepare the mirepoix by tossing the onions, carrots, and celery in some of the reserved fat, then brown them well either in the oven or on the stovetop.
  10. Add the browned mirepoix and tomato puree to the stockpot.
  11. Continue to simmer the stock.
  12. Create a sachet by placing the bay leaves, thyme, peppercorns, parsley stems, and cloves in a square of cheesecloth, then tie it with a string leaving one end long enough to tie to the stockpot handle.
  13. Attach the sachet to the stockpot handle.
  14. Simmer the stock for a total of 5-6 hours, skimming the surface as necessary and adding water as needed to keep the bones covered.
  15. Strain the stock through a china cap lined with several layers of cheesecloth.
  16. Cool the stock in a cold water bath, then refrigerate.
