Ingredients:
- 1 cup grated parmigiano-reggiano cheese
- 1 cup bread crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup olive oil
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 package (8 oz) cream cheese, softened
- 2 eggs
- 1/2 cup heavy cream
- Salt and freshly ground black pepper, to taste
- 2 cups shredded smoked gouda cheese
- 4 oz smoked salmon, chopped
- 1/2 cup fresh parsley leaves, chopped
- 1 cup creme fraiche
- 1 tbsp lemon juice
- Chives, for garnish
- Red onion slices, capers, hard-boiled egg whites and yolks, black caviar, and parsley, for garnish
Instructions:
-
Preheat the oven to 350°F (175°C).
-
Prepare a 10-inch springform pan by greasing it lightly with butter or oil.
-
Combine grated Parmesan cheese, bread crumbs, and melted butter in a bowl. Mix thoroughly, then season with your favorite seasoning blend.
-
Press the mixture firmly into the bottom of the prepared springform pan, creating an even crust.
-
Heat olive oil in a sauté pan over medium heat. Add chopped onions and garlic, then season with your preferred seasoning blend. Sauté for about 2 minutes until softened, then remove from heat and let cool completely.
-
In a food processor, combine softened cream cheese until smooth. While the processor is running, add eggs one at a time, followed by heavy cream, salt, and black pepper. Process until the mixture is smooth and well combined.
-
Transfer the cream cheese mixture into a mixing bowl, then fold in the cooled onion and garlic mixture, shredded smoked gouda cheese, chopped smoked salmon, and fresh parsley. Adjust seasoning if necessary.
-
Pour the cheese mixture into the prepared springform pan, spreading it evenly.
-
Bake in the preheated oven for about 1 hour and 15 minutes, or until the cheesecake is set in the center. It should be slightly firm to the touch.
-
Remove the cheesecake from the oven and let it cool completely in the pan before slicing.
-
For the garnish, whisk together creme fraiche and lemon juice in a small bowl. Season with salt and pepper to taste, then fold in chopped chives.
-
To assemble, place a dollop of the creme fraiche mixture in the center of each serving plate. Place a slice of the smoked salmon cheesecake on top of the sauce.
-
Garnish each plate with slices of red onion, capers, chopped hard-boiled egg whites and yolks, a spoonful of black caviar, and a sprinkle of fresh parsley leaves.
