Ingredients:

  • 1 cup grated parmigiano-reggiano cheese
  • 1 cup bread crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1 package (8 oz) cream cheese, softened
  • 2 eggs
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper, to taste
  • 2 cups shredded smoked gouda cheese
  • 4 oz smoked salmon, chopped
  • 1/2 cup fresh parsley leaves, chopped
  • 1 cup creme fraiche
  • 1 tbsp lemon juice
  • Chives, for garnish
  • Red onion slices, capers, hard-boiled egg whites and yolks, black caviar, and parsley, for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Prepare a 10-inch springform pan by greasing it lightly with butter or oil.

  3. Combine grated Parmesan cheese, bread crumbs, and melted butter in a bowl. Mix thoroughly, then season with your favorite seasoning blend.

  4. Press the mixture firmly into the bottom of the prepared springform pan, creating an even crust.

  5. Heat olive oil in a sauté pan over medium heat. Add chopped onions and garlic, then season with your preferred seasoning blend. Sauté for about 2 minutes until softened, then remove from heat and let cool completely.

  6. In a food processor, combine softened cream cheese until smooth. While the processor is running, add eggs one at a time, followed by heavy cream, salt, and black pepper. Process until the mixture is smooth and well combined.

  7. Transfer the cream cheese mixture into a mixing bowl, then fold in the cooled onion and garlic mixture, shredded smoked gouda cheese, chopped smoked salmon, and fresh parsley. Adjust seasoning if necessary.

  8. Pour the cheese mixture into the prepared springform pan, spreading it evenly.

  9. Bake in the preheated oven for about 1 hour and 15 minutes, or until the cheesecake is set in the center. It should be slightly firm to the touch.

  10. Remove the cheesecake from the oven and let it cool completely in the pan before slicing.

  11. For the garnish, whisk together creme fraiche and lemon juice in a small bowl. Season with salt and pepper to taste, then fold in chopped chives.

  12. To assemble, place a dollop of the creme fraiche mixture in the center of each serving plate. Place a slice of the smoked salmon cheesecake on top of the sauce.

  13. Garnish each plate with slices of red onion, capers, chopped hard-boiled egg whites and yolks, a spoonful of black caviar, and a sprinkle of fresh parsley leaves.
