Oseng Ikan Pari Asap (Smoked Skate Stir-Fry)

Ingredients

Cooking oil As needed
Red curly chilies 5 pieces
Bird’s eye chilies 7 pieces
Garlic 4 cloves
Shallots 5 pieces
Large tomato 1 piece
Galangal (smashed) 1 small piece
Ginger (smashed) ½ cm
Kaffir lime leaves 2 leaves
Soy sauce As needed
Green onion 1 stalk
Sugar To taste
Salt To taste
Water As needed
Seasoning (optional) To taste

Instructions

  1. Preparation of Fish: Clean the smoked skate fish thoroughly and cut it into small pieces. Fry in oil until cooked, then drain excess oil.

  2. Slicing the Aromatics: Slice all the aromatics—chilies, garlic, shallots, and large tomato.

  3. Sautéing the Aromatics: In a hot pan, heat a little oil and sauté all the aromatics except for the tomato and green onion until fragrant.

  4. Adding Liquid: Add a splash of water to the pan to create a sauce base.

  5. Combining Ingredients: Add the fried fish pieces, followed by salt, sugar, optional seasoning, and the sliced tomato. Stir well to combine all flavors.

  6. Final Touches: Add soy sauce and chopped green onion. Stir again and taste, adjusting seasoning as needed.
