Smoked Skipjack Tuna with Green Chili Sauce
Ingredients:
- 1/2 skipjack tuna, cleaned and washed
- 3 shallots
- 5 cloves garlic
- Red bird’s eye chilies, to taste
- Green and red bell peppers, to taste
- 2 cm galangal, bruised
- 2 bay leaves
- 5 kaffir lime leaves
- 1 cm ginger, bruised
- 1 green tomato
- Salt, to taste
- Seasoning powder
- Sweet soy sauce (kecap manis), to taste
- Water, as needed
Instructions:
- Clean the skipjack tuna thoroughly, removing any impurities, and wash it well.
- Fry the tuna until half dry, then drain excess oil and set aside.
- Sauté shallots and garlic until fragrant. Add galangal, ginger, bay leaves, and kaffir lime leaves until aromatic, then add the chilies and sauté until wilted.
- Pour in enough water to cover the ingredients. Add sweet soy sauce, salt, seasoning powder, and sugar. Stir well.
- Add the green tomato and then gently slide in the fried tuna. Adjust seasoning to taste.
- Simmer until flavors meld and the tuna is thoroughly cooked. Adjust the thickness of the sauce as desired.
- Once done, remove from heat and serve hot.
