Smoked Skipjack Tuna with Green Chili Sauce

Ingredients:

  • 1/2 skipjack tuna, cleaned and washed
  • 3 shallots
  • 5 cloves garlic
  • Red bird’s eye chilies, to taste
  • Green and red bell peppers, to taste
  • 2 cm galangal, bruised
  • 2 bay leaves
  • 5 kaffir lime leaves
  • 1 cm ginger, bruised
  • 1 green tomato
  • Salt, to taste
  • Seasoning powder
  • Sweet soy sauce (kecap manis), to taste
  • Water, as needed

Instructions:

  1. Clean the skipjack tuna thoroughly, removing any impurities, and wash it well.
  2. Fry the tuna until half dry, then drain excess oil and set aside.
  3. Sauté shallots and garlic until fragrant. Add galangal, ginger, bay leaves, and kaffir lime leaves until aromatic, then add the chilies and sauté until wilted.
  4. Pour in enough water to cover the ingredients. Add sweet soy sauce, salt, seasoning powder, and sugar. Stir well.
  5. Add the green tomato and then gently slide in the fried tuna. Adjust seasoning to taste.
  6. Simmer until flavors meld and the tuna is thoroughly cooked. Adjust the thickness of the sauce as desired.
  7. Once done, remove from heat and serve hot.
