Meat and Vegetable Pot Pie

Description

These scrumptious pies will not last! I usually make the filling the day before to give it the time needed to both cook and to cool down. With the filling ready made, these are quickly assembled and baked.

Ingredients

Quantity Ingredient
15 beef
1 lamb
2 onions
bay leaf
1 broccoli
375 carrots
300 tomato paste
2 brown sugar
45 cake flour
10 water
15 biscuits
8 muffin pan

Instructions

  1. Heat oil in a large pot over medium heat and brown the beef and lamb.
  2. Add onions to the pot and sauté until they become tender and translucent.
  3. Season the mixture to taste and add the bay leaf for additional flavor.
  4. Pour in the stock, bringing the mixture to a boil. Reduce heat, cover, and let it simmer for about 1 and a half hours or until the meat becomes tender.
  5. Once the meat is tender, add the broccoli, carrots, tomato paste, and brown sugar to the pot. Bring the mixture to a boil once more, then reduce the heat and let it simmer until the vegetables are tender.
  6. In a separate small bowl, mix the cake flour with water to create a paste.
  7. Add the cake flour paste to the pot to thicken the mixture. Stir well and let it cool.
  8. Preheat the oven to 180°C (350°F).
  9. Tear the biscuits in half and stretch them slightly to fit into the muffin pan.
  10. Fill each muffin cup with the prepared meat and vegetable mixture, then seal the edges of the pastry with your fingers.
  11. Bake the pies in the preheated oven for about 20 minutes or until the pastry is golden brown and cooked through.

Enjoy these savory pies as a hearty one-dish meal, perfect for any occasion, and embrace the South African flavors infused in every bite! 🥧
