Simple Soy Sauce Chicken Stew

Ingredients:

  • 500 grams chicken, cut into pieces, briefly fried, set aside
  • 3 pieces Chinese tofu, cut and fried, set aside
  • 2 potatoes, cut and fried, set aside
  • 3 cloves garlic, sliced
  • 2 shallots, sliced
  • 1/2 onion, sliced
  • 1 stalk green onion, chopped
  • 1 stick cinnamon
  • 2 cloves
  • 2 cm ginger, crushed
  • 1 tomato, sliced
  • Sweet soy sauce (Kecap manis), to taste
  • Oyster sauce (Saori brand), to taste
  • Salt and sugar, to taste
  • Cooking oil
  • Water
  • 2 teaspoons cornstarch (maizena)
  • For the spice paste:
    • Garlic
    • Shallots
  • Optional: Hard-boiled eggs

Instructions:

  1. Prepare the Base: Heat a generous amount of oil in a large pan over medium heat. Add the sliced shallots and garlic, sautéing until they become fragrant. Next, incorporate the spice paste and continue to sauté for a few minutes until aromatic.

  2. Build the Flavor: Add the chopped green onion and sliced onion to the pan. Pour in enough water to create a base for your stew. Stir well to combine.

  3. Season the Stew: Stir in the sweet soy sauce and oyster sauce to taste. Season with salt and sugar, and add the cinnamon stick, cloves, crushed ginger, and sliced tomato. Adjust the flavor as needed.

  4. Thicken the Sauce: Once the water starts to boil, mix the cornstarch with a little water to create a slurry. Gradually add this mixture to the pan, stirring continuously until the sauce thickens to your desired consistency.

  5. Combine Ingredients: Add the previously fried chicken, tofu, and potatoes to the pan. Stir gently to ensure everything is well-coated with the sauce. If the stew is too thick, you can add more water to reach your preferred consistency. Optionally, you can also add hard-boiled eggs at this stage.

  6. Simmer and Serve: Let the stew simmer for a few minutes, allowing all the flavors to meld together. Once everything is heated through and the sauce has thickened to your liking, the dish is ready to be served.

  7. Enjoy: Serve the Soy Sauce Chicken Stew hot with steamed rice for a comforting and satisfying meal.
