  2. Sauté the Aromatics: In a large pan, heat the vegetable oil over medium heat. Add the finely chopped onion and sauté for a few minutes until they become soft and translucent. Then, stir in the chopped garlic and cook for about 10 minutes until the onions start turning golden.

  3. Make the Masala: Once the onions are cooked, add the tinned plum tomatoes, grated ginger, salt, turmeric, fenugreek powder, and chilli powder. Stir everything together and allow it to cook until the tomatoes and onions meld into a thick, aromatic masala paste.
