Ingredients:

  • 1 tsp olive oil
  • 8 medium shrimp
  • 1/2 tsp dried oregano
  • 1 onion
  • 1 garlic clove
  • 2 cups rice
  • 1 cup reduced-sodium chicken broth
  • 1 can (14.5 oz) no-salt-added stewed tomatoes
  • 1/2 tsp salt
  • 1/8 tsp red pepper flakes
  • 1 cup diced ham
  • 1 tbsp chopped cilantro

Instructions:

Step Description Time
1 Heat 1 teaspoon of olive oil in a large skillet over medium heat. 2 minutes
2 Add the shrimp and 1/4 teaspoon of oregano to the skillet. Sauté for about 1-2 minutes until just cooked. 2 minutes
3 Remove the cooked shrimp from the skillet and set aside. 1 minute
4 In the same skillet, heat the remaining 2 teaspoons of olive oil. 1 minute
5 Add the sweet red pepper, onion, and garlic to the skillet. Sauté for about 3 minutes until tender. 3 minutes
6 Stir in the rice, along with the remaining 1/4 teaspoon of oregano and chicken broth. 1 minute
7 Cover the skillet and let the mixture simmer for 15 minutes, allowing the rice to cook. 15 minutes
8 After 15 minutes, stir in the stewed tomatoes with their juice, salt, red pepper flakes, and diced ham. 2 minutes
9 Cover the skillet again and let it simmer for an additional 5 minutes, stirring occasionally. 5 minutes
10 Once the rice is tender and the liquid is absorbed, return the cooked shrimp to the skillet. 1 minute
11 Heat everything through for about 1 minute. 1 minute
12 Sprinkle the dish with chopped cilantro before serving. 1 minute
