Instructions:

  1. Cook Rice: In a pot, cook basmati rice in 3 cups of water until tender. Once cooked, allow it to cool.

  2. Prepare Ingredients: While the rice is cooking, chop the onion, potatoes, tomatoes, and green capsicums. Also, bring the green peas to a boil.

  3. Sauté Spices: Heat oil in a wok. Add mustard seeds, black gram, and Bengal gram dals. Stir-fry for a minute until aromatic.

  4. Add Aromatics: To the wok, add green chilies, ginger, and curry leaves. Stir-fry for a minute to release their flavors.

  5. Cook Vegetables: Add the chopped onions to the wok. Then, add capsicums, potatoes, and tomatoes. Fry the vegetables until they are tender.

  6. Seasoning: Pour in half a cup of water and add salt to taste. Allow the vegetables to cook until tender.
