Ingredients:
- 250g all-purpose flour
- 2 potatoes, grated or mashed
- 2 tsp salt, divided
- 500g boneless chicken, thinly sliced
- 3 onions, thinly sliced
- 1 tomato, finely chopped
- 1 tsp red chili powder
- 3 eggs
- Juice of 1 lime
- 1 onion, thinly sliced (for garnish)
- Helen’s Mint Chutney (for garnish)
For Mint Chutney:
- 1 cup fresh mint leaves
- 1/2 cup fresh coriander leaves
- 2 green chilies
- 1 inch ginger
- 1 garlic clove
- 1 tbsp lemon juice
- Salt to taste
Instructions:

Prepare Mint Chutney:
- In a blender, combine mint leaves, coriander leaves, green chilies, ginger, garlic, lemon juice, and salt.
- Blend until smooth, adding a little water if needed to reach desired consistency. Set aside.

Prepare Dough:
- In a large mixing bowl, combine all-purpose flour, grated or mashed potatoes, 1 tsp salt, and oil.
- Knead into a firm but soft dough, adding a little water as needed.
- Cover and set aside.

Prepare Filling:
- Heat oil in a skillet over medium heat.
- Add sliced onions and cook until light brown.
- Stir in ginger-garlic paste and cook for 1 minute.
- Add chopped tomatoes and cook until softened.
- Sprinkle in red chili powder and add sliced chicken.
- Cover and cook on low flame until chicken is tender and dry.
- Remove from heat and squeeze lime juice over the chicken. Season with a pinch of salt.
- Mix sliced onions with the prepared mint chutney and set aside.
- Beat eggs in a bowl and season with a pinch of salt and pepper. Set aside.

- Divide the dough into small portions and roll out into thin chapatis (similar to tortillas).
- Heat a griddle pan over medium heat and lightly grease with oil.
- Cook each chapati on one side only until lightly browned. Do not flip.
- Pour 2 tsp of beaten egg onto the uncooked side of the chapati and spread evenly.
- Flip the chapati and cook until the egg is set.
- Remove from the pan, keeping the egg side up.
- Place a portion of the chicken filling in the center of each chapati.
- Sprinkle sliced onions on top of the filling.
- Roll up the chapati tightly to form a roll.
