Preparation: Gather all ingredients and tools. If available, you can also include emping (melon seeds).

Soaking the Crackers: Soak the shrimp crackers in hot water until they soften slightly, but don’t leave them too long to avoid breaking them during cooking. Alternatively, you can soak them in cold water for a longer time, but be mindful of stickiness.

Blending Spices: Blend the shallots, garlic, kencur, ginger, shrimp paste, salt, sugar, pepper, and bird’s eye chili with a tablespoon of oil until smooth to your desired consistency.

Sautéing: Heat a pan with oil. Once hot, sauté the blended spices until fragrant and slightly browned.

Cooking the Egg: Push the sautéed spices to one side of the pan. Crack the egg into the other side and let it cook slightly before scrambling it with the spices, reducing the heat.

Adding Vegetables: Incorporate the mustard greens and sauté for about 2 minutes. Then, add the soaked shrimp crackers and sauté for another minute.

Adjusting the Consistency: Gradually add water according to your preference for soupiness, cooking for an additional 3 minutes while stirring gently. Add sweet soy sauce if desired, and adjust the seasoning to taste.
