Ginger (smashed) 1 piece
Shallots 5 pieces
Garlic 3 cloves
Onion (sliced) 1 small
Bird’s eye chilies (optional) 8 pieces
Curly chilies 4 pieces
Small tomato 1 piece
Salt to taste
Sugar (white) 1 teaspoon
Royco seasoning (optional) to taste

Instructions

  1. Prepare the Tuna: Clean the tuna carefully to avoid breaking it apart. Fry the cleaned tuna until it is half-cooked.

  2. Blend the Spices: In a blender or mortar, blend the shallots, garlic, bird’s eye chilies, curly chilies, and tomato until smooth.

  3. Sauté the Spices: In a pan, sauté the blended spices. Add the lemongrass, bay leaves, ginger, and sliced onion. Cook until fragrant.

  4. Season the Mixture: Add a little water to the pan, then incorporate salt, sugar, and Royco seasoning. Let it simmer.

  5. Combine Tuna and Sauce: Once the mixture comes to a boil, taste and adjust the seasoning. Then, add the half-cooked tuna and stir until the sauce is absorbed and the mixture thickens.

  6. Serve: Once the tuna is well-coated and the sauce has reduced, your dish is ready to serve. Enjoy your delicious practical tuna dish! 😊
