Ingredients:
- 2 tubes of refrigerated biscuits
- 1 1/2 pounds ground beef
- 1/2 cup chopped onion
- 2 eggs
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1 cup crumbled feta cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup grated Parmesan cheese
- 1 1/2 teaspoons garlic powder
- Salt and pepper to taste
- Butter, for drizzling
Instructions:
-
Prepare the Crust: Start by greasing an 11 x 7 x 2-inch baking dish, then press and flatten the biscuits onto the bottom and up the sides of the dish to form the crust. Set aside while you prepare the filling.
-
Cook the Beef Mixture: In a skillet over medium heat, cook the ground beef and chopped onion until the meat is no longer pink. Drain any excess grease and set aside.
-
Beat the Eggs: In a large mixing bowl, beat the eggs until smooth and well combined.
-
Mix in the Spinach and Mushrooms: To the beaten eggs, add the thawed and drained spinach, along with the drained mushroom stems and pieces. Mix everything together until evenly distributed.
-
Incorporate the Cheeses and Seasonings: Now, stir in the crumbled feta cheese, shredded Monterey Jack cheese, grated Parmesan cheese, garlic powder, and season with salt and pepper to taste. Mix well to ensure all ingredients are evenly incorporated.
-
Combine with the Beef Mixture: Add the cooked ground beef and onion mixture to the bowl with the spinach and cheese mixture. Stir everything together until fully combined, creating a deliciously savory filling.
-
Assemble and Bake: Spoon the prepared filling into the biscuit crust, spreading it out evenly. For an extra indulgent touch, drizzle a bit of melted butter over the top of the filling.
-
Bake to Perfection: Place the baking dish in a preheated oven at 375°F (190°C) and bake uncovered for 25-30 minutes, or until the crust is beautifully golden brown and the filling is heated through and bubbly.
-
Serve and Enjoy: Once baked to perfection, remove the Spinach Beef Biscuit Bake from the oven and allow it to cool slightly before slicing into generous portions. Serve it up alongside your favorite sides or enjoy it as a standalone dish.
