Spinach & Cheese Gujiya Recipe

Gujiya is a beloved Indian treat traditionally enjoyed during festivals like Holi and Diwali. While the classic version is sweet, this recipe offers a savory twist. Spinach & Cheese Gujiya is a delicious snack made with spinach, cheese, and a crispy dough shell. This version is perfect for children who may not enjoy greens otherwise, as the cheese makes the spinach irresistible. Whether you shape the gujiya by hand or use a gujiya or calzone maker, it will turn out deliciously crunchy and cheesy.

Ingredients:

For the Dough:

  • 1-1/2 cups All Purpose Flour (Maida)
  • 1/2 teaspoon Salt
  • 1-1/2 tablespoons Oil
  • 1/2 cup Lukewarm Water

For the Filling:

  • 1 cup Spinach (blanched & chopped)
  • 4 cloves Garlic (finely chopped)
  • 1/3 teaspoon Salt
  • 1/2 teaspoon Green Chilli Paste
  • 1 cup Mozzarella Cheese (grated)
  • 2 cups Oil (for deep frying)

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Instructions:

  1. Prepare the Dough:
    In a large mixing bowl, combine the all-purpose flour and salt. Add the oil or ghee and mix well. Gradually add lukewarm water and knead the mixture into a soft, smooth dough. Cover the dough with a muslin cloth and set it aside to rest while you prepare the filling.

  2. Prepare the Filling:
    Blanch the spinach leaves and drain the excess water thoroughly. Finely chop the spinach and place it in a bowl. Add salt, green chili paste, and finely chopped garlic to the spinach. Mix thoroughly. Then, stir in the grated mozzarella cheese and set aside.

  3. Shape the Gujiya:
    Heat oil in a wok for deep frying. Dust your countertop with flour. Take a small portion of dough (about the size of a lemon) and roll it into a ball. Flatten it into a round disc, similar to a small puri. Place a spoonful of the spinach and cheese filling in the center of the puri. Fold the dough over to form a crescent shape. Seal the edges tightly and crimp the sides with a fork to secure them. Alternatively, you can use gujiya-making molds for a uniform shape.

  4. Fry the Gujiya:
    Once the oil is hot, gently slide the gujiyas into the oil, frying 1-2 at a time. Fry them on both sides until golden brown and crispy. Remove from the oil and drain on a kitchen towel to absorb excess oil.

  5. Serve:
    Serve your Spinach & Cheese Gujiya hot with Peanut Chilli Dipping Sauce or Tomato Ketchup. Pair it with a hot Masala Chai for a perfect tea-time snack or serve it during Diwali, Holi, or any festive gathering.
