Savory Steamed Baung with Tempoyak and Kemangi

Brengkes Baung Tempoyak Simpel

Ingredients

Quantity Ingredient
500 g (1 fish) Baung, cut into 5 pieces
3-4 tbsp Tempoyak
2-3 tbsp Ground red chilies
1 tbsp Turmeric powder
1 stalk Lemongrass, cut into small pieces and crushed
To taste Salt and sugar
To taste Kemangi (Asian basil)
For wrapping Banana leaves & toothpicks

Instructions

  1. Prepare the Marinade: In a bowl, combine tempoyak, ground red chilies, turmeric powder, crushed lemongrass, salt, and sugar. Mix thoroughly and adjust seasoning to your taste.

  2. Marinate the Fish: Add the fish pieces into the marinade, ensuring they are well coated. Let it sit for a while to absorb the flavors.

  3. Add Kemangi: Gently fold in the kemangi leaves with the marinated fish.

  4. Wrap the Fish: Take the banana leaves and lay them flat. Place the marinated fish in the center, add more marinade and some kemangi on top. Fold the leaves over the fish and secure with toothpicks at both ends. Repeat until all fish pieces are wrapped.

  5. Steam: Place the wrapped fish in a steamer and cook for about 30 minutes until fully cooked.

  6. Serve: Carefully unwrap the banana leaves, plate the fish, and enjoy your Brengkes Baung Tempoyak with rice or as is.
