Pepes Tofu with Shredded Mushrooms

Ingredients:

Ingredient Quantity
Shredded oyster mushrooms 3 pieces
Firm tofu ½ block
Young coconut, grated ½ piece
Garlic 3 cloves
Shallots 5 cloves
Galangal (1 cm) 1 piece
Bird’s eye chilies 6 pieces
Salt To taste
Sugar To taste
Flavor enhancer To taste
Tomato 1 piece, sliced
Banana leaves (for wrapping) As needed
Egg (optional) 1 piece

Instructions:

  1. Prepare the Spice Paste: Begin by grinding the galangal, shallots, garlic, and salt until you achieve a smooth paste.

  2. Mix the Tofu Filling: In a bowl, mash the tofu with a fork and then incorporate the shredded mushrooms and grated coconut into the spice paste.

  3. Season the Mixture: Add sugar, flavor enhancer, sliced bird’s eye chilies, and the sliced tomato. Mix well until all ingredients are thoroughly combined. If you prefer a richer filling, add the optional egg at this stage.

  4. Wrap with Banana Leaves: Take a piece of banana leaf and place a portion of the mixture in the center. Fold the leaves over to form a neat parcel.

  5. Steam the Parcels: Place the wrapped packets in a steamer and steam for approximately 30 minutes or until the banana leaves turn a vibrant brown color.
