Tumis Rebung Ayam: A Flavorful Stir-Fry of Bamboo Shoots and Chicken

Ingredients:

  • 1 kg pre-cooked bamboo shoots, sliced thinly
  • 250 g chicken fillet
  • 2 large shallots
  • 5 small shallots
  • 5 cloves garlic
  • 1 teaspoon ground black pepper
  • Soy sauce, to taste
  • Sweet soy sauce (kecap manis), to taste
  • Sugar, to taste
  • Salt, to taste
  • Chicken seasoning (optional), to taste

Instructions:

  1. Prepare the Bamboo Shoots:
Begin by thinly slicing the pre-cooked bamboo shoots. Set them aside for later use.

  2. Prepare the Chicken:
Cut the chicken fillet into small pieces or grind it if you prefer a finer texture.

  3. Chop the Aromatics:
Finely slice the large shallots, small shallots, and garlic cloves. This blend of aromatics will create a fragrant base for your dish.

  4. Sauté the Aromatics:
Heat a generous amount of oil in a large pan or wok over medium heat. Add the sliced shallots and garlic to the pan. Sauté until the aromatics are fragrant and the raw smell disappears.

  5. Cook the Chicken:
Add the chicken pieces to the pan with the sautéed aromatics. Cook, stirring occasionally, until the chicken is fully cooked and changes color.

  6. Add the Bamboo Shoots:
Once the chicken is cooked, incorporate the sliced bamboo shoots into the pan. Stir well to combine.

  7. Season the Dish:
Season the mixture with salt, sugar, ground black pepper, soy sauce, and sweet soy sauce. Adjust these seasonings to your taste preferences, ensuring a balanced flavor profile.

  8. Simmer:
Continue cooking the mixture until most of the liquid evaporates and the flavors meld together.

  9. Serve:
Remove from heat once the dish is cooked to your liking. Transfer to a serving dish and enjoy!

This Tumis Rebung Ayam is a delicious blend of savory chicken and crisp bamboo shoots, enhanced by aromatic spices and sauces. It pairs wonderfully with steamed rice and makes for a satisfying meal that’s sure to please any palate.
