Oseng Cecek dan Tahu: A Flavorful Indonesian Stir-Fry

Ingredients

Cecek (beef tripe) 1/4 kg
Tahu (tofu) 2 blocks
Spices
Garlic 3 cloves
Shallots 5 bulbs
Red chili 1
Green chili 1
Galangal to taste
Tomato 1
Additional Seasonings
Cooking oil for sautéing
Water as needed
Soy sauce to taste
Sugar to taste
Salt to taste
Masako (seasoning) to taste
Pepper to taste

Instructions

  1. Begin by thoroughly washing and slicing the cecek into bite-sized cubes. Likewise, cut the tofu into small, even cubes.
  2. Heat oil in a pan over medium heat, and fry the tofu until it’s half-cooked. Once done, remove it from the pan and set aside in a bowl.
  3. In the same pan, sauté all the spices—garlic, shallots, red chili, green chili, and galangal—until fragrant and aromatic.
  4. Add the cecek and tofu to the pan, stirring briefly to combine, then pour in a little water.
  5. Season with the additional ingredients: soy sauce, sugar, salt, Masako, and pepper. Let the mixture simmer until the cecek is tender.
  6. Taste and adjust the seasoning as necessary to achieve your desired flavor profile.
