Oseng Cecek dan Tahu: A Flavorful Indonesian Stir-Fry

Instructions
- Begin by thoroughly washing and slicing the cecek into bite-sized cubes. Likewise, cut the tofu into small, even cubes.
- Heat oil in a pan over medium heat, and fry the tofu until it’s half-cooked. Once done, remove it from the pan and set aside in a bowl.
- In the same pan, sauté all the spices—garlic, shallots, red chili, green chili, and galangal—until fragrant and aromatic.
- Add the cecek and tofu to the pan, stirring briefly to combine, then pour in a little water.
- Season with the additional ingredients: soy sauce, sugar, salt, Masako, and pepper. Let the mixture simmer until the cecek is tender.
