Stir-Fried Beef with Vegetables
Ingredients:
- 200 grams of beef, thinly sliced (I use sliced beef)
- 1 carrot, cut into small pieces
- 1 stalk of gobo (burdock root), cut diagonally (optional)
- 2 leaves of cabbage, torn into pieces
- 1/2 onion, sliced thinly
- 1 tablespoon soy sauce
- 1/2 cup beef broth
- Black pepper, salt, and sugar to taste
For Marinade:
- 1 tablespoon soy sauce (shoyu)
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger

Marinate the Beef: In a bowl, combine the beef slices with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of grated ginger. Mix well and let it marinate for 30 minutes.

Sauté Aromatics and Beef: Heat 1 tablespoon of sesame oil in a skillet or wok over medium-high heat. Add the sliced onions and marinated beef. Stir-fry until the beef changes color and the onions become translucent.

Add Vegetables: Incorporate the carrot pieces and gobo (if using). Pour in the beef broth and add 1 tablespoon of soy sauce. Season with a pinch of sugar and black pepper. Stir everything together.

Simmer: Cover the skillet partially with a lid. Allow the mixture to cook until the liquid has reduced slightly and the vegetables are tender.

Add Cabbage: Stir in the torn cabbage leaves and cook until they are slightly wilted. Taste and adjust seasoning with salt if necessary.

Serve: Once the cabbage has wilted and the flavors have melded together, remove from heat. Serve hot with steamed rice or as a side dish.
