Ingredients:

  • 1 medium eggplant, cut into chunks
  • 2 ounces beef, cut into bite-sized pieces
  • 1 ripe tomato, chopped
  • 3 cloves garlic, crushed and finely chopped
  • 3 shallots, finely chopped
  • 1 red chili, seeds removed and sliced
  • 1 stalk green onion (optional)
  • Salt to taste
  • Sugar to taste
  • Black pepper to taste
  • 1 tablespoon oyster sauce
  • 150 ml water
  • Cooking oil

Instructions:

  1. Prepare the Beef:

    • Season the beef pieces with salt, sugar, and oyster sauce. Allow the beef to marinate for at least 15 minutes; refrigerating is preferred to enhance the flavor.
  2. Fry the Eggplant:

    • Heat a generous amount of cooking oil in a pan over medium heat. Add the eggplant chunks and fry until they are cooked through and golden brown. Remove from the pan and set aside.
  3. Cook the Beef:
