Stir-Fried Flat Rice Noodles with Beef Meatballs (Kwetiaw Goreng Baso Sapi)

Ingredients:

  • 1 package of fresh flat rice noodles (kwetiaw)
  • 6 beef meatballs (bakso sapi)
  • 2 chicken eggs
  • 100 grams of bean sprouts
  • Caisim (Chinese mustard greens)
  • Fried shallots (bawang goreng)
  • 2 cloves of garlic, crushed
  • 3 cloves of shallots, thinly sliced
  • Fish sauce
  • Soy sauce
  • Sweet soy sauce
  • Oyster sauce
  • Ground pepper
  • Bird’s eye chili (optional)

Instructions:

  1. Prepare the Aromatics: Begin by heating a wok or large frying pan over medium heat. Add a small amount of oil and sauté the thinly sliced shallots and crushed garlic until they release their aroma and become golden brown.
  2. Add the Meatballs: Slice the beef meatballs into halves or quarters, depending on your preference. Add them to the wok and cook briefly until they are heated through. Push the meatballs to the side of the wok.
  3. Cook the Eggs: In a small bowl, beat the eggs and season them with a splash of soy sauce and a pinch of ground pepper. Pour the beaten eggs into the empty side of the wok and scramble them until they are fully cooked.
  4. Incorporate the Greens: Drizzle a bit of fish sauce over the sautéed shallots and garlic. Add the caisim and stir-fry until they start to wilt.
  5. Add the Noodles: Once the caisim has wilted, add the flat rice noodles to the wok. Gently toss to combine all the ingredients.
  6. Season the Dish: Season the noodles with soy sauce, sweet soy sauce, oyster sauce, and additional ground pepper to taste. Stir everything together until the noodles are evenly coated with the sauces.
  7. Add the Bean Sprouts: Finally, add the bean sprouts to the wok. If you prefer a crunchy texture, cook the bean sprouts for only a short time until they are slightly softened but still crisp.
  8. Serve and Garnish: Transfer the stir-fried noodles to serving plates. Garnish with a generous sprinkle of fried shallots for added flavor and crunch. For an extra kick, you can add sliced bird’s eye chili if desired.
