  • 2 bunches of long beans, cut into bite-sized pieces

  • 2 tablespoons tauco (fermented soybean paste)
  • 2 tablespoons sweet soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon ground black pepper
  • Salt, sugar, and seasoning to taste
  • 7 red bird’s eye chilies (adjust to taste)
  • 2 red chilies
  • 1 segment of galangal
  • 1 medium green tomato
  • 2 cloves garlic
  • 3 shallots

Instructions:

  1. Prepare Ingredients:

    • Cut the long beans and tofu into bite-sized pieces.
    • Heat oil in a pan and fry the tofu until it’s half-crispy. Remove and set aside.
  2. Sauté Aromatics:

    • In the same pan, sauté the garlic and shallots until they become fragrant.
    • Add the sliced galangal, bird’s eye chilies, and red chilies. Continue to stir-fry until the chilies are fragrant.
