Stir-Fried Oyster Mushroom, Tofu, and Scrambled Eggs Recipe

Ingredients

Firm tofu 1 block
Eggs 2 large
Garlic cloves 2, minced
Shallots 6, thinly sliced
Large red chilies 2, thinly sliced
Bird’s eye chilies (optional) 5, or more if you prefer spicier
Ground black pepper To taste
Salt 1 teaspoon
Mushroom broth powder (or any broth) 1 teaspoon
Sweet soy sauce (small sachet, ABC brand or any brand) 1 sachet
Water As needed
Cooking oil As needed for frying and stir-frying

Instructions

  1. Prepare the Tofu: Cut the tofu into small cubes, ensuring each piece is bite-sized. Heat a little oil in a pan, then fry the tofu until it’s golden and crispy. Once done, set the tofu aside to drain on a paper towel.

  2. Shred the Mushrooms: While the tofu is frying, shred the oyster mushrooms into smaller strips. Wash them thoroughly under running water, then drain well and set aside.

  3. Scramble the Eggs: In the same pan, after frying the tofu, add a little more oil if necessary. Crack the eggs and lightly scramble them in the pan, stirring until fully cooked. Break the eggs into small pieces with your spatula, then remove them from the pan and set aside.

  4. Sauté the Aromatics: Heat a tablespoon of oil in the pan and sauté the minced garlic, sliced shallots, and chilies over medium heat until fragrant. Add a little bit of water and the sweet soy sauce, stirring well. Let the mixture simmer until it comes to a boil.

  5. Combine Ingredients: Once the sauce is simmering, add the shredded oyster mushrooms, fried tofu, and scrambled eggs to the pan. Stir everything together until the ingredients are well combined and evenly coated in the sauce.

  6. Season: Sprinkle in the salt, mushroom broth powder, and ground black pepper. Stir to distribute the seasoning evenly. Adjust the taste by adding more salt or broth powder if needed.

  7. Cook Through: Let everything cook together for a few minutes to ensure the flavors meld and the mushrooms are tender. If the dish starts to dry out, you can add a splash of water to keep it moist.

  8. Serve: Once everything is cooked through and the flavors have blended nicely, remove the pan from heat. Your stir-fried oyster mushrooms, tofu, and scrambled eggs are now ready to serve. Enjoy this savory, umami-packed dish with a side of steamed rice or on its own.
