Stir-Fried Water Spinach with Tofu (Jeko’s Style)

Ingredients

Water spinach (kangkung) 1 bunch
Firm tofu (cooked) 1 block
Garlic cloves 2
Shallots 4
Saori seasoning sauce 1 packet
Salt To taste
Red chili peppers 5

Instructions

  1. Prepare the Ingredients:

    • Start by slicing the water spinach into bite-sized pieces.
    • Cut the tofu into small cubes or slices, depending on your preference.
    • Peel and finely slice the garlic cloves and shallots.
    • Thinly slice the red chili peppers for a hint of spice.
  2. Sauté the Aromatics:

    • Heat a little oil in a wok or frying pan over medium heat.
    • Add the sliced garlic, shallots, and red chili peppers to the pan.
    • Stir-fry until the garlic and shallots are golden and fragrant, releasing their delicious aroma.
  3. Add Seasoning and Tofu:

    • Pour a small amount of water into the pan to prevent the ingredients from sticking.
    • Add the packet of Saori seasoning sauce, stirring it in with the aromatics.
    • Next, carefully add the tofu pieces, stirring gently to coat them with the seasoning.
  4. Cook the Water Spinach:

    • Add the water spinach to the pan, tossing it with the tofu and seasonings.
    • Cover the pan and let the mixture cook for a few minutes until the water spinach wilts and becomes tender.
  5. Final Touch:

    • Once everything is cooked through, taste the dish and add a pinch of salt if needed.
    • Give everything a final stir and remove the pan from the heat.
  6. Serve:

    • Your stir-fried water spinach with tofu is now ready to be enjoyed! Serve hot as a main dish or a flavorful side to your favorite rice dish.
