Stuffed Chicken Wings by Dapoer Linggar

Ingredients:

  • 500 grams chicken wings
  • Steamer pot
  • Marinade ingredients:
    • Chicken broth powder
    • 1/2 tsp ground pepper
  • Filling ingredients:
    • 250 grams ground chicken
    • 100 grams shrimp
    • 1 tbsp sesame oil
    • 1 tsp fish sauce
    • 1/2 tsp soy sauce
    • Granulated sugar
    • Chicken broth cube
    • 1 tbsp oyster sauce
    • 2 cloves garlic
    • 2 tbsp tapioca flour

Instructions:

  1. Clean the chicken wings and remove the bones from the upper part of the wing (like the drumette). Break the joint between the upper and lower wing, twist to separate the bone from the meat, and carefully pull out the bone, leaving the meat intact.

  2. Marinate the deboned chicken wings with chicken broth powder and ground pepper for 2 hours or overnight in the refrigerator.

  3. Blend all filling ingredients until smooth and well-combined.

  4. Test the filling by heating a pan with margarine, placing a small amount of filling, and cooking until done. Adjust seasoning if needed.

  5. Place the filling mixture into a piping bag or any suitable tool for filling.

  6. Steam the chicken wings for 20 minutes until fully cooked, then allow them to cool.

  7. Optionally, freeze for later use or fry over low heat until golden brown.
