Mom’s Rolled Flank Steak Recipe 🥩

I have carried this absolutely delicious secret around for years, making it for guests and relatives on occasion. It gets raves each time. Sue Domnick, a fine chef from Peoria, Illinois, gets credit for creating this wonderful taste.
Ingredients:
- 2 pounds flank steak
- 1/4 cup soy sauce
- 1/4 cup cooking sherry
- 1/4 cup tarragon vinegar
- 1/2 teaspoon pepper
- 1/4 cup butter
- 1 onion, chopped
- 1 green pepper, chopped
- 3 cups fresh mushrooms, sliced
- 2 tablespoons fresh parsley, chopped
- Salt to taste

Recipe Instructions:

Prepare the Steak:
- Prick the flank steak on both sides with a fork.
- Sprinkle lightly with water and plain meat tenderizer.

Marinate the Steak:
- Place the steak in a large ziplock bag or another non-metal container.
- Mix and add soy sauce, cooking sherry, tarragon vinegar, and pepper to the steak.
- Marinate the steak in the refrigerator for 2 hours, turning it every 30 minutes.

Prepare the Vegetable Mixture:
- In a pan, melt the butter over medium heat.
- Add chopped onion and green pepper and sauté until tender.
- Then, add sliced mushrooms, chopped parsley, salt, and the remaining pepper.
- Sauté for an additional 5 minutes.

Roll and Cook the Steak:
- Preheat the oven broiler or grill.
- Transfer the marinated steak to a large pan.
- Arrange the sautéed vegetable mixture lengthwise on the steak.
- Roll the steak starting from the long side and hold it together with toothpicks.
- Arrange the rolled steak on foil and brush it with the remaining marinade.
- Broil in the oven for 5 to 10 minutes per side, depending on your preferred level of doneness, or grill until it reaches the desired temperature.

- Once cooked, remove the steak from the oven or grill.
- Allow it to rest for a few minutes.
- Then, carefully remove the toothpicks.
- Cut the rolled steak lengthwise on a bias to serve.
